Ingredients

  • 150g Self-raising flour
  • Quarter teaspoon Bicarbonate of Soda
  • 2 ripe bananas (roughly mashed)
  • 50g butter (soft)
  • 1 egg
  • 150g Soft, brown sugar
  • Half teaspoon Vanilla essence
  • Quarter teaspoon salt
  • Teaspoon ground cinnamon

Method

  • STEP 1
    Preheat oven to 180 degrees (Gas mark 4)
  • STEP 2
    Sift flour, bicarb, salt & cinnamon into food blender
  • STEP 3
    Add all of remaining ingredients to blender and blend until entirely smooth
  • STEP 4
    Empty mixture into 8" x 4" loaf tin, and bake for 40 minutes
