  • 500g raspberry



    A member of the rose family, raspberries have a wonderfully intense, sweet taste, and many…

  • 500g caster sugar
  • 3 tbsp red wine vinegar


  1. Put the raspberries in a pan with the sugar and vinegar. Mash over a low heat for 10 mins until smooth and syrupy. Rub through a sieve into a clean pan.

  2. Tip the seeds from the sieve into a bowl and stir in 300ml water, then sieve again to remove the last of the pulp from seeds. Pour the liquid into the pan with the sieved pulp, stir well and boil for 1 min. Pour into small sterilised bottles and seal. The cordial will keep unopened for a few months. Once opened, store in the fridge.

can I use sweetener rather than sugar?


Yummy. I have to admit that I only sieved once but it was fine. I added juice of 3 x limes with a bottle of fizzy water and it tasted delicious.

Lovely pink cordial made with allotment glut of raspberries. Made 800ml. Gorgeous with carbonated water and ice. Ended up straining it through a J cloth lined sieve as some of the raspberry seeds escaped through the sieve mesh on first sieving. Would definitely make again.

This made about 750ml of cordial - gorgeous deep raspberry pink colour - almost too pretty to open the bottle!

I did this with strawberries and mint, and added some lemon juice to reduce the sweetness. Absolutely delicious served over ice, with a mint sprig and a little water to dilute.

This is an excellent recipe, especially as we had a glut of raspberries from our allotment. Very quick and easy to make.

The cordial is very good and great with sparkling white wine. It also freezes well if you wish to keep enjoying it until next years harvest.
