Method

  1. Tip tortilla chips on to a baking tray, pour over salsa and scatter over a few sliced spring onions.
  2. Grate over a good chunk of cheese (fontina is perfect, but cheddar will do). Add a pinch of crushed chilli flakes, then put under a hot grill for about 3 minutes to melt the cheese. Serve with soured cream or guacamole (optional).

We had this as a strater followed by enchillados, really helped sustain while we waited for the main course. Took a little more than 5 minutes to cook mind, we might have had way more nachos though!

Just to add, we had this recipe last night but instead of chilli flakes and spring onions, my friend suggested we use the new Heinz Beans sweet chill. These were perfect on top of the cheese! Definitely recommended.

Fab recipe and easy to adapt to your storecupboard ingredients. I've tried garlic, tinned chilli beans, left-over baked beans (!), various cheeses, onions, tuna, bacon... Whatever you have - just throw it in. There are never any left-overs! Great weekend treat.

Thank you Silvana. I made this for a crowd last weekend and put it on a friend's table along with everything else everyone had brought. It was the first dish to be completely demolished and everyone asked how I had made it. A great success for me because it took very little effort to do, I bought everything in jars and packets.

Not really a recipe, more of a basic assembly job... If you're going to slice up some spring onions then you may as well chop up a little bit more and make your own salsa - it will taste much better than any salsa in a jar.

Made baked nachos for the first time, and came out really well! I skipped the chili, had a spicy salsa, and substituted spring onions for lots of fresh, chopped cilantro. Was great!

I think the idea behind this type of "recipe" Phlebas, is to encourage people to "have a go while having fun" Lighten up!!

If I whipped this up for friends I'd be a laughing stock in the village. Put some cheese on some "poor" people crisps and grill. Ha ha ha.
