Spicy Chorizo Stew

Ingredients
- 1 Chorizo round, chopped into bitesize chunks
- 3 garlic cloves, crushed
- 1 med red onion, finely sliced
- Pinch of chili flakes
- 2 cans chopped tomatoes
- 3 chicken breasts, precooked and cut into chunks
- 8 rashers of bacon, grilled and sliced
Method
- STEP 1Put the chorizo in a large saucepan and fry for roughly 3 minutes until cook. Add the red onion, garlic and chilli flakes and cook until the red onion is tender
- STEP 2Add the chopped tomatoes and warm them through, if spicier food is preffered, add a pinch more chilli!
- STEP 3Stir in the chicken and the bacon, and heat until the mixture is bubbling. Serve immediatly. I find this works well with a bit of warmed bread for mopping up the tomatoes and maybe a crunchy green salad
