Baked cheese with herbs

An instant gourmet cheese-dip - ridiculously simple and ready in just 20 minutes. Leave out the herbs if you like, it'll still taste great

Method

  1. Heat oven to 200C/fan 180C/gas 6. Remove the cheese from the box and discard any wrapping, then put the cheese back in the box. Place on a baking sheet and bake for 15 mins.
  2. Remove from the oven and take off the lid. Cut a large cross through the top of the cheese, then peel back the quarters of rind. Scatter over chopped herbs and serve with pitta crisps or breadsticks.

Making pitta crisps

To make pitta crisps, heat oven to 200C/fan 180C/gas 6. Mix together 1 crushed garlic clove and 2 tbsp olive oil. Cut 4 pitta breads into strips, place on a baking sheet and drizzle over garlicky oil. Turn to coat well, season and bake for 5 minutes until lightly browned and crisp.

    I served this at my mum's birthday BBQ with some basil that I had growing in the garden, and bread sticks for dipping. It was really sociable, a bit like having a fondue.

    This is a great, low-effort, casual starter, makes for a v sociable start to a meal. Served it as the starter/ nibble item for a winter girlie night in, went down a treat, v comforting and even the most picky eaters can't resist melted cheese and bread!
