  • 1 rounded tbsp half-fat crème fraîche
  • 2 tbsp chopped dill
  • zest ½ lemon

  • 2 x 100g/4oz smoked haddock fillets
  • 50g/ 2oz baby spinach leaves

Method

  1. Tip the lentils into a pan with the onion, carrot and celery. Pour in the stock and bring to the boil. Give it a stir, then reduce the heat, cover and simmer for 20-25 mins, until the lentils are tender.

  2. Mix together the crème fraîche, half the dill and the lemon zest, adding a little seasoning. Put the fish in a shallow dish with a splash of water and cover with cling film. Microwave on Medium for 4-6 mins until the fish flakes easily.

  3. When the lentils are cooked, stir in the spinach until the leaves are barely wilted, then stir in the crème fraîche mixture. Divide between 2 warmed plates and top with the haddock. Scatter over the remaining dill and serve.

Feels nice and healthy. Had to be dairy free so missed out the creme fraiche and used mayonnaise instead.

Great recipe, have cooked it twice now and everyone loved it. The lentils needed an extra 10 minutes. I pan fried the fish - first time with smoked river cobbler (been meaning to give this a try!) and then with salmon. The dill really makes this dish. I will definitely cook the lentils again and again, lovely fresh flavour.

Surprisingly delicious, and so healthy. My partner groaned when I told him what we were having, but he ended up devouring the lot. Will definitely be making it again. Lentils took a lot longer than stated though - about 45 minutes.

Tasty. Tweaked the recipe. Used up white fish instead of smoked haddock. Grilled it with black pepper and chilli flakes. Used tinned lentils. Added them to the sauted onion, carrots and celery. Nice dish. Will do again.
5 stars. Problems rating this recipe from a tablet.

Lovely recipe. Made some tweaks. Instead of smoked haddock, used up white fish. Grilled it, topped with blak pepper and chilli flakes. Used tinned lentils. Added them for last few mins to warm through to sauted carrots, celery, and onion. Will do again.

Dee-lish. I used salmon fillets instead, and swapped dill for some thyme and it was yummy. Really quick and easy and has few ingredients. Will make for a dinner party sometime as it looked pretty impressive too.

made this tonight & followed it to the letter. a very nice meal which everyone ate (daughter had chicken & not fish) & there were 4 clean plates. will definitely be doing this again as it went down very well with some crusty buttered bread!

I am usually rate most recipes in this site as really god or excellent but this, I feel, and is vastly overrated. It's a dish which didn't hang together.

I loved this quick and easy recipe. I thought it was a long shot cooking it for my 5 and 3 year olds, but they polished it off and told me this was now one of their favourite suppers!

cooked this tonight and it was fabulous - nutritionally the perfect meal. I don't think it matters which fish you use, it will taste good. Next time I will try the lentils using basil instead of diil, and chicken breasts instead of fish. Maybe marscapone instead of Creme Fraiche? The options are limitless.

This will become a firm favourite!

Simple and delicious. I cooked it for my hubby (who works in high end catering) last night and not only did he absolutely love it, he even said it looked like 'restaurant food'. And this from a man who is not the biggest lentil fan! It's on the list to make again!

Having read the other comments, I was expecting this to be uber-delicious, and it was very nice, but not quite the yummiest thing in the world, possibly because my expectations were too high!

Made this for supper last night. I followed the recipe exactly and I have admit that I was pleasantly surprised. To think that a meal that is so healthy and nutritious can be so, so delicious is remarkable! Absolutely gorgeous. Will absolutely be making this again and again.
