  1. Heat the grill to high. Whisk the eggs in a large bowl with the chopped parsley, pepper and salt, if you want. Heat the oil in a large non-stick frying pan, then fry the onion wedges over a high heat for about 4 mins until they start to brown around the edges. Throw in the tomatoes and olives and cook for 1-2 mins until the tomatoes begin to soften.

  2. Turn the heat down to medium and pour in the eggs. Cook the eggs in the pan, stirring them as they begin to set, until half cooked, but still runny in places – about 2 mins. Scatter over the feta, then place the pan under the grill for 5-6 mins until omelette is puffed up and golden. Cut into wedges and serve straight from the pan.

To start with OMG!!!. I have been a member of this site for too many years to mention and althought I use it a lot and there are very good recipes I think I have only commented once or twice when what I class as that EXCEPTIONAL recipe pops up, and boy one just has. I eat omelettes but not a huge fan but on Monday this week I started a healthy eating plan and while browsing for such recipes I came across this one. I read it thinking that can't possibly work - however driven by the reviews I have just made it scaled down for one and for the first time in along time I'm at a loss for words to describe the explosion of colour on my plate and the explosion of flavour in my mouth. Enjoy everybody you are so worth it :)

I just made an individual version of this omelette for lunch and it was lovely! I added some oregano to the egg mixture to add more flavour. The only problem I had was that the tomatoes and feta went a little watery which made the omelette go a bit soggy.

Best omelette I've had, the olives are an acquired taste but overall very nice meal and very filling and not greasy at all, I will definitely be making this again.

Really lovely recipe, cooked it for some fussy eaters and they loved it! I used 7 eggs for 3 people and green olives instead of black and it was delicious

Great recipe, very quick and simple, perfect mid-week meal. We loved how the feta melted when put under the grill. Have made it twice now and came out great each time.

Halved the ingredients and this made us a lovely evening meal. Some bacon or even some roast chicken would make this particularly awesome.

For 2, use half the eggs, but all other ingredients the same! LOVELY, looks wonderful. I used Sainsburys - Be Good to Yourself - Greek Salad Cheese to save on fat, tastes just wonderful. Will certainly be doing again, very easy. Serve with big green salad. Job done! Thank u :0)

This is probably a very dumb question but what does "place the pan under the grill" mean. Could I do this in the oven or do I need an actual grill? I'm so new at cooking :( Thank you in advance!

Hi bnrichardson most ovens should have a grill setting which provides a really intense heat from the top down. If you were to put it in the oven the omelette could over-cook throughout - you just want an intense blast of heat towards the end of cooking to finish the very top. Make sure your frying pan has a heatproof (metal) handle as a plastic one might melt, but remember the handle could get very hot when grilling so have a thick cloth or oven gloves to hand.
