Method

  1. Melt the butter in a large frying pan, then add the bacon and fry for a few mins until golden. Add the thyme, mushrooms and leeks with seasoning (remember bacon can be salty), cover pan and cook on a low heat for 20-25 mins until leeks are tender.

I really enjoyed this, I would add an extra leek next time, also I added some garden peas in at the end, was delish

I didn't have much for lunch so thought i experiment as this recipe looked nice. I kept all the main ingredients the same but left out thyme sprigs. I melted the butter in a frying pan, added one sliced leek,cooked till almost soft. Added 3 slices of smoked bacon which i chopped in and cooked till almost done. Then added 4 chopped chestnut mushrooms and cooked till all soft and bacon cooked. Stirred in breadcrumbs (i had some in freezer pre made) added some blue cheese but any cheese would be fine. Cooked till melted and everything cooked through. Then put in a bowel (it made Knuth for 2) made a nice lunch, so thought i share.
