Lamb & apricot stew

A fruity and warming Middle Eastern tagine to be served with couscous and herbs - a speedy casserole with plenty of flavour

Method

  1. In a medium-sized pan, heat 1 tbsp of the oil. Season the meat and fry briefly until browned. Remove from the pan and add the remaining oil. Add the onion, garlic and ginger, and fry with a little seasoning. Cook for 5 mins until soft, then add the spice mix, tomato purée, apricots and stock, and return the lamb to the pan. Simmer gently for 25 mins. Serve with warm couscous, mint or coriander leaves, and lemon wedges.

    I tried this when I got the Dec magazine and have had it twice since as it's so good. It's really easy to make and so delicious. It also reheats really well; definitely one of my favourites on here

    Both of us loved this stew as it was something different..especially enjoyed the cous cous as we usually have rice, potatoes or pasta. I sprinkled a few sliced almonds into mine which I had some left over from another recipe.

    annam.... I don't see any reason why not. If i were to use chicken i would use chicken thigh on the bone, it may take a little longer to cook but i find thigh on the bone more flavorsome and juicy than that of chicken breast (but its just personal choice).

    I managed to get the spice Ras-El-Hanout from Waitrose. This recipe is really very easy and absolutely delicous. I popped mine in the slow cooker for a few hours to finish it off and will be making this again and again. A real winter warmer.

    We loved this stew, it was rich, spicy and fruity but not overpowering. We added more apricots and the juice of half a lemon to add a little sweetness. Couldn't find the spices in store, but ordered them on-line from Tesco. Will definitely be making again.

    I wouldn't try this recipe but the 5stars above tempted me... Fantastic! Easy and tasty, quick to prepare and surprising flavours. Family liked it. I didn't have suggested spices and used garam masala instead but will look for them in shops and try it again.

    This is a definite 5 star recipe. So easy to make and so full of flavour it left a wonderful taste in my mouth when finished. I can't fault anything and was perfect served with couscous and steamed green beans.

    Have made this a few times and it always goes down really well. I make it with chicken thighs (skin removed) because other half doesn't like lamb and I do it in the slow cooker or in the oven at a low heat, so it's ready in advance

    Ocado stock the ras-el-hanout. Delicious meal. I used frozen left over roast leg of lamb, I added a red pepper and almonds. Delicious with cous cous and chopped mint. Left in the slow cooker for a few hours. Yummy!

  • 5 soft dried apricots , halved
  • 300ml vegetable or chicken stock
  • cooked couscous , mint or coriander leaves, and lemon wedges, to serve
