Method

  1. Heat oven to 190C/fan 170C/gas 5. Rub the flour, sugar and butter together until the mixture resembles breadcrumbs. Alternatively, you can do this in the food processor. Add enough egg to bring the mixture together to form a stiff dough.

  2. Flour your hands and shape the dough into a tube, about 5cm in diameter. Cut into 2cm-thick slices and place on a large baking sheet. Space them out as the mixture will spread when baking.

  3. Make a small indentation in the middle of each slice with the end of a wooden spoon, and drop a tsp of jam in the centre. Bake for 10-15 mins until slightly risen and just golden. Cool on a wire rack.

When making the indent for the jam do not make it too deep as when it comes to removing the biscuit from the baking tray the jam part will collapse.
I also tried them with lemon curd instead of jam and that worked very well.
Nothing amazing but definitely edible.

Just made these with our 4 year old Grandson. He got really involved with the mixing, rolling and "cutting" out the round (supervised of course) it was just like play dough! Will definitely do this again... It was fun for us both.

I used demerara sugar as I didn't have any caster - adds a bit more flavour and a little crunch!

Just made a batch of these - could not believe his easy they were. My 3 year old whip doesn't really like jam has asked if I can make them with chocolate spread! So here goes!!!

Brilliant recipe! After making it for the first time, my sister and I both made another batch the very next day. You can put other flavour jams, peanut butter or even Nutella in the middle although put the Nutella or peanut butter in after baking. I will treasure this recipe and make it again and again!

These were easy to make and although they did taste nice, I didn't think they were quite good enough for 5 stars.

I thought they could do with a bit more flavour and meant to take the advice of a previous commenter and add some vanilla extract but forgot! I will make them again and will try using it next time, or possibly add some cocoa/chocolate to see how that turns out.

So simple yet so good!
I didn't have any dessicated coconut, but I added 1/4 of a cup of ground almonds to the mixture just before adding the egg, and the flavour and texture was good.
