Ingredients

  • 1 tbsp olive oil, plus extra
  • 4 skinless unsmoked or smoked haddock fillets, approx 140g/5oz each
  • 2 handfuls cherry tomatoes
  • 3 tbsp mayonnaise
  • 1 tsp garlic paste or 1 garlic clove, crushed
  • 100g white breadcrumbs
  • zest and juice 1 lemon
  • 2 handfuls flat-leaf parsley, leaves roughly chopped

Method

  1. Heat oven to 220C/fan 200C/gas 7. Lightly oil a large baking tray, then lay the haddock and tomatoes alongside each other. In a small bowl, mix the mayonnaise with the garlic paste or crushed garlic, then spread evenly over the fish.
  2. In a separate bowl, toss together the breadcrumbs, lemon zest, juice and parsley, and season to taste. Top the fish with the breadcrumb mixture. Drizzle olive oil over the fish and tomatoes, and bake for 15 mins or until the fish flakes slightly when pressed and the crust is golden and crunchy.

Used smoked haddock and it was a simple, delicious meal.

The fish was cooked beautifully, and had a real melt in the mouth texture. The combination of the garlic mayonnaise and breadcrumbs worked perfectly, and the tomatoes added that extra bit of moisture and tang. Served with some extra steamed veg, will certainly be making this again.

Very simple and tasty meal, will definitely make again! Worked very well with Panko Japanese breadcrumbs which made it very light. Great for a fuss free mid-week dinner. Definitely recommend!

Don't eat fish too often, but will definitely make this again. Very tasty, simple and quick to make. Some of my family who aren't fish lovers, thought this was delicious.

I used mediterranean bread for the breadcrumbs and served it with roasted tomatoes, peppers, onion and sweet potatoes and my family loved it. The lemon flavour in the topping was lovely. Perhaps a little less mayonnaise is needed - just enough to make the breadcrumbs stick without making it soggy.

This was really easy and rally nice. Serviced with rosemary roasted potatoes and green beans. Will definitely do again.

I'm not a great fan of fish but realise it is good for you. I tried this recipe tonight - it is simple - and really delicious! Will be cooking it again! I used wholemeal breadcrumbs, but it still tasted lovely.

Easy to do; tastes delicious. I used unsmoked haddock and ordinary tomatoes cut in half and I put the topping on them too.

I have made this several times and everyone loves it. I also use wholemeal breadcrumbs to make it healthier. I have served it with home-made oven chips and posh mushy peas (garden peas seasoned and mashed with crème fraiche). Perfect every time & incredibly easy!

This was very quick and easy and loved by all, including 7yr old son who doesn't always like fish and says he doesn't like mayo!
I had frozen haddock so cooked it wrapped in foil for first 15 mins then added topping and baked for last 15 mins.
Will definately be making this again.
