Ingredients

  • 110g pack lemon and garlic couscous
  • 200ml hot vegetable stock
  • 1 tbsp olive oil
  • handful chopped fresh herbs (parsley, plus thyme, tarragon or rosemary is good)
  • 4 spring onions, thinly sliced
  • 4 Sun-blush or sundried tomatoes, chopped
  • 2 salmon fillets, approx 140g/5oz each

Method

  1. Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.
  2. Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal – like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

I cook this in foil for 20 mins and dish up onto plates in the kitchen. Seriously easy but special!
I like the suggestion from dal101 to try this with chicken - I can see that becoming a firm favourite.

Really yummy. It took a little longer as I made the couscous myself with chopped garlic, juice of a lemon and some sunflower seeds. I'll add olives next time along with the sundried tomatoes. The children are the lot. I served it with a carrot / beetroot salad in Apple cider vinegar with toasted seeds and sultanas. Delicious.

So far have only made this with chicken but it's become a favourite already. I buy the sundries tomatoes from the pick and mix at the supermarket and add olives any of the marinading oil to the couscous for extra flavour - YUMMY!!!

Lovely recipe - I used Ainsley Harriot's Moroccon couscous which worked really well. I struggled to get the paper to stay in a parcel shape so might use tin foil next time. Will definitely make again!

Truly awesome recipe. Could'nt find lemon and garlic couscous (in the Netherlands) so added some shortly baked garlic and lemon juice to the couscous instead. Combined it with some steamed spinach with a honey dressing (extremely simplified version of the honeyed winter salad ;)

Very easy dish, made easier and quicker by using a pre-prepared couscous & vegetable salad! Went down really well with the whole family.

Absolutely delicious. Only thing I did different was the salmon was smoked. Only thing I would do different is leave some sun-dried tomatoes whole, as it looks in the photograph. So easy to do, minimum effort, maximum flavour.

Ainsley Harriot's packets of couscous work well with this as they come in so may different flavours. The thai one is particularly good.

Absolutely LOVE this! We cook in the microwave for speed - super quick, healthy & tasty! Highly recommend ...love it in the paper wrapping = less mess. Great with different flavours of couscous too for variety.
