  • 1 small baguette, cut into 12 slices
  • 2 tbsp olive oil
  • 140g white crabmeat
  • 1 red chilli, deseeded and finely chopped
  • 1 tbsp coriander, chopped
  • zest and juice 1 lime

Method

  1. Heat oven to 200C/180C fan/gas 6. Put the baguette slices onto a baking tray, drizzle over half the oil, add some seasoning, then bake for 5 mins until golden at the edges.
  2. Meanwhile, mix the crab, chilli, coriander, lime zest and juice with the remaining oil and some seasoning, then spoon on top of the toast just before you serve.

I thought this was a great appetizer. It's a very delicate flavour and you need to get the chilli/lime balance just right. I used a large lime and had a little too much lime coming through.

This was an excellent appetizer but for me it lacked something so added a teaspoon of hot horseradish sauce for extra flavour. It was very popular with my guests.
