  • 10 large vine tomatoes, halved
  • 4 garlic cloves, sliced
  • ½ bunch thyme
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil

Method

Heat oven to 160C/140C fan/gas 3. Put the tomatoes on a baking sheet with the garlic and thyme, drizzle over the balsamic vinegar and olive oil, Add some seasoning and roast for 1 hr. Remove and set aside to cool.

One of our firm favourites now, beautifully intense flavour, and always on our plates when we have steak, but also beautiful with firm white fish and lamb steaks.

I did this as a side dish to serve with fish. It was so tasty and my guests loved it because it wasn't too heavy or overpowering. Would definitely do again and would also use as the basis for other recipes, as above.

So versatile as you can keep them in the fridge and put them in salad, tart, soup and so on. They taste fantastic with garlic and thyme.

Roasting the toms gave them a lovely flavour, used this recipe at a famliy meal- compliments all round!
