Ingredients

  • 1l low-salt chicken stock
  • 2 tsp Thai red curry paste
  • 100g flat rice noodle
  • 150g pack shiitake mushroom, sliced
  • 125g pack baby corn, sliced
  • 2 skinless salmon fillets, sliced
  • juice 2 limes

Method

  1. Pour the stock into a large pan, bring to the boil, then stir in the curry paste. Add the noodles and cook for 8 mins. Tip in the mushrooms and corn and cook for 2 mins more.

  2. Add the salmon to the pan and cook for 3 mins or until cooked through. Remove from the heat and stir in the lime juice, soy sauce and a pinch of sugar. Ladle into 4 bowls and sprinkle over the coriander just before you serve.

Very good! I was worried it might be a bit bland and watery, relying on stock and curry paste for flavour but the salmon really makes it. A satisfying and warming soup, but low calorie; perfect!

Really tasty soup! It's quite quick to make and nice with the salmon it. Next time, I think I'd add more veg, maybe some sugar snaps.

Can't wait to try this! Me & the hubby are big salmon fans and I love thai food. Will probably use broccoli (read in the comments that it works well) as I'm also not a fan of the mushrooms.

My family loved this soup. I've replaced the mushrooms with broccoli since my son doesn't eat mushrooms but the soup was lovely anyway!

Used chestnut mushrooms instead of shitake, and tinned baby corn cobs. Also added a pack of fresh udon noodles rather than flat rice noodles so the whole dish took about 10 minutes to cook and was delicious.

Replaced the mushrooms with tenderstem broccoli because i'm not a big fan of them. Also added some fish sauce to the stock and topped it all off with a generous helping of Sriracha sauce. Loved it.
