  • 1 tbsp olive oil
  • 4 boneless skinless chicken breasts
  • 200g pack cherry tomatoes
  • 3 tbsp pesto
  • 3 tbsp crème fraîche (half fat is fine)
  • fresh basil, if you have it

Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Yummy dish, I made mine with extra thick cream instead of creme fraiche, added some garlic and fresh chillies for a little extra flavour and served with pasta, tastes fantastic!!!!

Delicious....quite quick to make and it is very tasty! I put in a dash of paprika and chilli, which I think tastes good combined with the pesto and tomatoes

Enjoyed this mid-week meal as it is fast, easy and tasty. I didn't put in quite as much pesto as the recipe says as i think it can be quite over-powering.
I stirred in some tagliatelle and broccoli to serve. Lovely.
I like the idea of adding chilli flakes, i will try this next time.

Ok, but tangy for some reason, i used a shop bought organic basil pesto...could not get rid of the tang...didn't even use the 3 tbsp as suggested... Otherwise, very nice..once got past that tangy flavour!

This recipe was okay. It's simple and quick and therefore a good choice for a quick mid week recipe, but nothing special. There are only a few basic ingredients in this dish so it tasted as you would expect really!

I usually marinate the chicken breasts in a tablespoon each of pesto and olive oil in a large freezer bag. Then bash the chicken until all one thickness while still in the bag. Gives the chicken a tasty coating when cooked. I always use the full tub of creme fraiche too as my lot like it saucy.

so tasty. The potato slices go really well with it. Always a favourite in our house. Added bonus it is so easy and quick to cook.

Absolutely love this recipe. Have used it time and time again. Like to use chopped chicken and serve as as pasta sauce. Everyone loves it. Tasty and looks fab on the plate.

I have used this recipe time and time again in different ways. We like to chop the chicken and use the recipe as a sauce for pasta. For being so easy, it tastes absolutely delicious and looks great on the plate!

Lovely dish that is so easy to do. I made it with leftover chicken from our roast and added a few chilli flakes as recommeded by other person who rated it. Will definately be doing again.

Not very impressed, I found it rather bland.
Second time I made it I added sun dried tomatoes and olives but I still found it a bit boring

This was a really nice change, never really tasted anything like it. I had it with some homemade savory rice...lovely for a cold October night.

Well ! this went down very well in my household. My husband who is a bit of a foody and the better cook in our house took his first bite and said 'This is lovely' ! my 11 year old declared it as 'amazing'. I was suprised at the reaction as it took so little time to produce and I often slog over the stove for much longer and get no reaction at all !!
I did use twice the amount of pesto and creme freche to create more sauce and added some blanched green beans that I had in the fridge to add a bit more colour.
I agree with the comment that the sauce would be good with pasta and prawns or chicken and will try that soon.
I will be cooking this again in the future. Thank you.

Very nice. Not an every week meal, but will definitely do again. Perfect after a busy day.
