  • 1 tbsp olive oil
  • 4 boneless skinless chicken breasts
  • 200g pack cherry tomatoes
  • 3 tbsp pesto
  • 3 tbsp crème fraîche (half fat is fine)
  • fresh basil, if you have it

Method

  1. Heat the oil in a frying pan, preferably non-stick. Add the chicken and fry without moving it until it takes on a bit of colour. Turn the chicken and cook on the other side. Continue cooking for 12-15 mins until the chicken is cooked through. Season all over with a little salt and pepper.
  2. Halve the tomatoes and throw them into the pan, stirring them around for a couple of minutes until they start to soften. Reduce the heat and stir in the pesto and crème fraîche until it makes a sauce. Scatter with a few basil leaves if you have them, then serve with rice and salad or mash and broccoli.

Really nice recipe, great for when you have leftover creme fraiche. I use half fat creme fraiche as it makes it great recipe when you're trying to shed a few pounds. I did find it a bit tangy the first time I made it, so now I caramelise an onion and add it to the mix, just to take the edge off the sharpness.

This was quick and easy to make and tasted great, will definitely make this again.
I went for asparagus instead of the tomatoes.

Really nice, quite rich but very flavoursome. We used sun dried tomato pesto.

very tasty, dont like pesto so used red pesto instead and it was lovely. dont freeze, the texture of the sauce splits

Wow, this is a lovely recipe. made with the olive potatoes as suggested. It is sooooo tasty and really easy to make. We make it about once a fortnight

Stumbled across this recipe and so glad I did! Really tasty, used chicken thighs and also added some chilli flakes as recommended (plus a dash of Tabasco). Gave it a nice touch of heat.

So tasty! I made the full amount of sauce for half the chicken (I always like extra sauce!) I found the chicken needed a little longer so will slightly flatten next time.
I added a diced red pepper too as I didn't have enough tomatoes and let cook for a minute before adding the tomatoes. I will absolutely make this again with the pepper too!

I made this again and enjoyed it more than the first time. I added less pesto, 3 cloves of garlic, butter and sundries tomatoes. It was wonderful. Will be a regular dish now.
