Sweet potato & lentil soup

Method

  1. Put the curry powder into a large saucepan, then toast over a medium heat for 2 mins. Add the olive oil, stirring as the spice sizzles in the pan. Tip in the onions, apple, garlic, coriander stalks and ginger, season, then gently cook for 5 mins, stirring every so often.
  2. Meanwhile, peel, then grate the sweet potatoes. Tip into the pan with the stock, lentils, milk and seasoning, then simmer, covered, for 20 mins. Blend until smooth using a stick blender. Stir in the lime juice, check the seasoning and serve, topped with roughly-chopped coriander leaves.

    Lovely soup. I am cutting down on fat so replaced the olive oil with frylight. Think I added a bit too much curry powder so will cut down on that next time I make it. Will also just chop instead of grating all the ingredients....can't see how it will make much difference seeing as it's being blended anyway. Will definitely make again.

    Halved the recipe and made it in my Thermomix.I used Patak's mild curry paste instead of curry powder.I loved it. Will make it again.

    I also made this with frylight, and just chopped the veg... life is too short to grate!!! Lovely soup, had it with toasted pitta and even my fussy daughter loved it!

    Divine soup! Took everyones advice and chopped everything, onl grated the ginger. Also, forgot to put coriander on my shopping list so made it without and it still tasted gorgeous.

    Gorgeous! First time I've ever made soup and it was a triumph. Tasted lovely and I left out all the fat so it was even more healthy for my slimming world regime! I grated which I now see I didn;t have to do! Next time I'll do it the easier way but it wasn't too bad anyway to do the 'right' way. Lovely recipe and my low fat hating boyfriend scoffed two bowls full

    So delicious! Made this last night for supper and went down a storm... I put about 800ml of stock in and the soup was super creamy with a lovely texture. As per other comments, the only thing I grated was the ginger.... Will definately be making this again!

    Great recipe, I took the advice of not putting in quite as much vegetable stock and it made it a much more thicker soup, something I think really makes a cracking soup!

    I ignored the part about grating and just roughly chopped the ingredients. I simmered it for the given time and it was perfectly cooked and ready to blend. A very tasty, filling soup perfect for a cold day.

    Really tasty and easy to make, lovely warming soup for a cold winter day. My favourite soup so far. I added 200grm fromages fraie the second time i made it and it was even nicer
