Ingredients

  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 200g chicken breasts, diced
  • good chunk fresh root ginger
  • 1-2 tbsp harissa paste, plus extra to serve
  • 10 dried apricots
  • 220g can chickpeas, rinsed and drained
  • 200g couscous
  • 200ml hot chicken stock
  • handful coriander, chopped, to serve

Method

  1. Heat the olive oil in a large frying pan and cook the onion for 1-2 mins just until softened. Add the chicken and fry for 7-10 mins until cooked through and the onions have turned golden. Grate over the ginger, stir through the harissa to coat everything and cook for 1 min more.
  2. Tip in the apricots, chickpeas and couscous, then pour over the stock and stir once. Cover with a lid or tightly cover the pan with foil and leave for about 5 mins until the couscous has soaked up all the stock and is soft. Fluff up the couscous with a fork and scatter over the coriander to serve. Serve with extra harissa, if you like.

Had this made for me last night, really tasty, really easy, loved it, very spicy for me (and that was with only 1tbsp of Harissa!) but Greek Yoghurt on the side cooled it nicely. Will def have again and pretty healthy too.

My husband & I just loved this dish! The ingredients were cheap to buy, it was so simple to make and then finally, it tasted delicious! However, taking my first mouthful I commented that it definitely needed a crisp side salad to compliment it!

Enjoy, we did!!!

had it last night loved it, didnt use chickpeas, harissa or apricots as I didnt have any in but used sultanas and added some chargrilled asparagus and courgette that needed using up it was delicious doing it the same way next week! with extra sultanas.

I love this recipe! I'm single, so I make half quantities to serve 2 instead of 4. The other half makes a lovely cold lunch the next day. Quick and easy! :)

I would agree that this dish is lacking in something. I was very pleased that my 2yr old ate it as it is sometimes difficult to get anything other that nuggets and chips inside him. But I would agree that it needs something else just to pick it up.

I'm also pretty sure that there is a bit missing in the recipe's instructions. After step 1 I took the pan off the hob before adding the last of the ingredients as in my experience couscous doesn't need cooking, it just needs to soak. This way I didn't experience any sticking or burning at the bottom of the pan.

Very very tasty. I made this exactly as per the recipe.
I took mine to work to have for lunch along with my ham salad. I took an extra tub with me for all my colleagues to try - they really enjoyed it.

Family loved this one! Maybe added too much ginger. Served with Wholemeal Pitta's which gave it a lovely touch! Yum.

Felt this dish lacked something, even with the addition of chilli, still felt like something was missing. Both my husband and I thought it was too dry, definitely needed a side sauce, like the comments above, of maybe a yoghurt dip.

The whole family loved this one, even my 7 year old who is a fussy eater. We made flat bread with this and a few dips...yummie :o)

Loved this recipe. Substituted some sultanas for a couple of the apricots and added some toasted flaked almonds. I served it with warm flatbreads, yogurt dip and a crisp salad. Divine!

I left out the stock and used water with a bit of salt and parsley. I also used Tabasco at the table instead of Harissa so my kids could have it less spicy. My wife didn't like the apricots. My kids ate half of it but they weren't keen on the chick peas. I loved it all!

I made this for our student horse back riding group and my fellow students loved it. It was so easy and quick to make. There was also no left over!
