Method

  1. Place the chicken breasts between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin. Dip in the egg, then breadcrumbs, mixed with half the Parmesan. Set aside on a plate in the fridge while you make the sauce.

  2. Heat oil and cook garlic for 1 min, then tip in passata, sugar and oregano. Season and simmer for 5-10 mins.

  3. Heat grill to High and cook the chicken for 5 mins each side, then remove. Pour the tomato sauce into a shallow ovenproof dish and top with the chicken. Scatter over the mozzarella and remaining Parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling. Serve with vegetables or salad and some pasta or potatoes, if you like.

I was sceptical about this but it was absolutely gorgeous! It was a big hit with my 2 year old daughter! I served it with spaghetti & salad!

I love this recipe and so does the rest of the family. I use gluten free bread for the breadcrumbs and it still works perfectly.

Yummy! great with spaghetti and mixed veg! I used cheddar instead of mozzarella but was still great!

Really tasty, we loved it. The only thing I would change is to add more flavours to the passata (more oregano, more garlic and some basil). It was quite fiddly and took longer than 15min to prep. I would definitely make it again, on the weekend when I've got a bit more time.

Great, simple recipie. I added sliced chestnut mushrooms to the sauce and fresh basil rather than oregano.

Added shallots & peppers (all finely chopped) to garlic at the start to make the sauce a hidden veg fest for the picky children! Served with pasta as the sauce is perfect!

Used a full ball of mozzarella, added an extra clove of garlic. The result was a hit with the whole family . Super quick, super easy and super tasty!

Yum! So quick and easy and yet so tasty. Followed the recipe exactly, adding seasoning at the appropriate places. Served it with pasta and it went really well. Will definitely make again.

Very good.
Made some alterations due to cupboard/fridge contents which all worked well:
-Replaced passata with a tin of tomatoes and 2 tbsp tomatoe puree
-Used half the amount of parmasan
-Replaced mozarella with low fat garlic and herb soft cheese.
Will definitely make again - thanks!

Easy to make but really quite bland. My boyfriend seemed to like it but he eats anything. Definitely wont be making this again. What a waste!

Delicious, served it with spaghetti. I did 3 chicken breasts and a bit more sauce etc aswell as we're very greedy and past experience has taught me that recipes never result in big enough meals for all 4 of us!

Delicious! A really good dish. Served it with courgettes and rustic potatoes (chop up white potatoes into small cubes place on a baking tray and drizzle with olive oil and dried mixed herbs then cook for about 25 mins) Will definitely use this recipe again.

I really don't understand how people thought it was fiddly or that the prep took a while, it was very simple and quick to make.
It tasted gorgeous, I forgot to add any parmesan and used a full mozzarella ball and like another poster said my kids thought it tasted just like pizza. I served it with baby potatoes and green beans, I wasn't sure how the baby potatoes would go with it but they were fab, definitely a keeper!
