Strawberry cheesecakes

This speedy, low-fat recipe means you can enjoy creamy cheesecake without the guilt

Method

  1. Put the biscuits in a plastic bag and bash with a rolling pin until you have chunky crumbs. Divide between 4 glasses or small bowls.
  2. Beat the soft cheese, yogurt, sugar and vanilla together until smooth, then spoon over the crumbs and chill until you are ready to serve.
  3. Stir the jam in a bowl until loose, then gently stir in the strawberries. Divide the strawberries between the cheesecakes and serve.

Top these little pots with whatever fruit you've got at home. For a delicious banoffee version, slice bananas and toss with a squeeze of lemon juice and a spoonful of caramel sauce, or roughly crush raspberries with peach slices to make it Melba-style.

    These taste delicious and look really pretty in their pots. You can get away with no jam, just puree a handful of the strawberries and mix this with some of the chopped ones.

    So easy to make and so scrummy!! I've tried the caramel with the banana and also black cherry ( Hartleys jam). If your a fan of cheese cake I recommend this to all. I do suggest eating it the same day as I found the biscuits went soggy

    Very sweet, satisfying puds, and perfect if you are watching how much fat you eat, although still very sugary. I exchanged the strawberries for blackberries and used 'superjam', a new jam that doesn't use sugar, but grapejuice to sweeten and preserve. This, as well as using a little lemon with the joghurt, and using just a small amount of icing sugar instead of caster sugar, made these lovely little puds perfect, if you don't have a huge sweet tooth.

    I made this for friends, and it was a lovely light way to end a meal. I omitted the strawberry jam but instead made a blackcurrant coulis and served that on top with raspberries. Fab-u-lous!

    Very very quick to make and went down a treat. I substituted the strawberrys for frozen mixed berries which i defrosted in advance, and mixed with raspberry jam. Will definitely be making these again!

    I find 'low fat' recipes very interesting. Did you know that it is excess SUGAR which turns into body fat...not saturated fat. Also, polyunsaturated fat (veg oils) are burnt slower by the body, and too can become body fat.     Made this cheese cake for my partner and I on valentines day. We both loved it. My partner wiped the bowl clean. Very easy to make, used light digestives for the base and weight watchers jam for the topping. Still quite a calorific pudding but fat wise it's great. Will make again as a healthy treat. I may try it with less sugar next time or sweetener to cut the calories more.
