  • 1 onion
  • 6 rashers streaky bacon, chopped
  • 300g risotto rice
  • 1l hot vegetable stock
  • 100g frozen peas

Method

  1. Finely chop the onion. Heat 2 tablespoons of olive oil and a knob of butter in a pan, add the onions and fry until lightly browned (about 7 minutes). Add the bacon and fry for a further 5 minutes, until it starts to crisp.
  2. Add the rice and stock, and bring to the boil. Stir well, then reduce the heat and cook, covered, for 15-20 minutes until the rice is almost tender.
  3. Stir in the peas, add a little salt and pepper and cook for a further 3 minutes, until the peas are cooked. Serve sprinkled with freshly grated parmesan and freshly ground black pepper.

Absolutely delicious and very easy to make. I have even cooked it and put in fridge ready to reheat later in the week when I don't have much time to cook dinner. Is a firm favourite.

This was absolutely lovely! I didn't use bacon though, I used thick pieces of salted/cured pork and chopped it up into lots of pieces! It was lovely! I added more seasoning though and a dollop of cream fraiché! and it was soo tasty!

Really lovely recipe. I used some peppers and an onion too which we all enjoyed. I would also suggest a little grated parmesan. Yum

lovely receipe and such a change... made with with chicken breast instead of bacon as didnt have any.. great colouring with the peas added and i must admit it was delicious-i enjoyed every mouthful! definately top receipe!

Is the first time I've made a risotto in the 'non-traditional' way and will definately be making it again. Used sugar snap peas (chopped into 3) instead of peas and it gave it a lovely crunch.

What a great recipe - followed it to the letter (except added a few more peas) and it was delicious. Definitely a new favourite & the best part is I don't have to stand and stir it for ages as I usually do with risotto. :o)

love the ease of putting all the stock in at once, makes for much easier cooking :) used normal bacon and added in mushrooms with the onions. tasted great and whole family have enjoyed it both times i've made it
