Method

Tip couscous into a large bowl, pour over stock. Cover, then leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper and dice the cucumber. Add these to the couscous, fork through pesto, crumble in feta, then sprinkle over pine nuts to serve.

I replaced Feta cheese with Wensleydale as I am not a lover of Feta and I also used yellow peppers to give even more colour. Supplied lemon wedges for those who wanted a little extra tang to the flavour. Very favourable with my lunch guests!

ACTUALLY took 10 minutes, healthy, yummy, travelled well. The addition of pesto really makes it I think. :)

This is just delicious. I left out the toasted pine nuts the first time around - which is not advised as they really make the dish! Great for lunch boxes.

Wow I love this. I made it this evening for a bbq tomorrow but think I might have to make some more as I seem to be eating it all. Will be making again and again

very tasty and healthy. I added prawns marinated in garlic and herbs and served it with toasted pita bread and dips.

So easy to do and tasted great. My husband loved it. I'll definitely make this again but I might take out the cucumber and add another type of pepper.

I left out the pesto (not too fond of it) but added more feta and a little sweetcorn... Delish!
