  • 100g couscous

  • 200ml hot low salt vegetable stock (from a cube is fine)
  • 2 spring onion

  • 1 red pepper
  • ½ cucumber
  • 50g feta cheese, cubed
  • 2 tbsp pesto



    Pesto is a generic Italian name for any sauce made by pounding ingredients together.


  • 2 tbsp toasted pine nut


  1. Tip couscous into a large bowl, pour over stock. Cover, then leave for 10 mins, until fluffy and all the stock has been absorbed. Meanwhile, slice the onions and pepper and dice the cucumber. Add these to the couscous, fork through pesto, crumble in feta, then sprinkle over pine nuts to serve.

Love this. Used mint and toasted almonds flakes instead of pinenuts. Great with ciabatta and houmous for supper and loads left for lunchbox.

Everyone I've made this for has raved about it and my boyfriend insists we have it on a regular basis! As I don't like cheese, we have it without the feta but it's still packed with flavour and texture. I've never made anything so quick and easy that tastes so great!

At last I have found an alternative to my usual cous cous salad. This is sooo tasty and a very nice side dish for our BBQ. I am looking forward to having the leftovers for my lunch tomorrow.

Absolutely a hit in the family! I made it today and everybody especially my dad loved it! I didn't have spring onion at the moment so I substituted it with chopped red onion, it worked fine!! Will definitely make it again, what a fresh and healthy summer dish!!

Really easy to do and really tasty. I made it with Quinoa instead of cous cous, as one of our guests was gluten intolerant. It worked really well.

Fantastic ! Had no cucumber in so I replaced it with courgette briefly fried in some garlic infused olive oil also added about 4 sundries tomatoes finely chopped - a winter version ! . Everyone loved this - will make it again soon !

I could eat this all the time, it's so good. A friend made it for a barbecue and then I had to track down the recipe - I was hooked! I often add more peppers in (different colours) and other salad veg, depending on what I've got in the fridge.

I have made this so many times as it's fantastic, you can also swap the pesto for balsamic vinegar and it works great.. last a couple of days in the fridge!

This was just lovely! I added some chopped cherry tomatoes and lemon juice and used a crumbly cheddar rather than feta. I didn't have pesto so left it out. Oh and a generous grinding of black pepper. Gorgeous.

Made this as an accompaniment to a recent bbq that I had. Went down an absolute storm! Went very well with various grilled meats and spicy koftas. Have made several times since. Perfect for a packed lunch with some salad leaves and grilled chicken - very tasty.

Really nice as well as quick and easy. Great for lunchboxes. I changed it slightly by using red tomato based pesto. I also cut the peppers into chunks rather than slices - bit easier to eat at the desk!
