Ingredients

  • 150g butter
  • 150g sugar
  • 3 eggs
  • 1 lemon,rind
  • pinch of salt
  • 200g plain flour
  • 2 tsp backing powder
  • 1 tbsp cinamon

For the filling:

  • 6 small apples
  • 6 tsp raisins
  • 1 tbsp sugar
  • 100 g butter
  • 40 g grated almonds or walnuts

Method

  • STEP 1
    Preheat the oven to 175C
  • STEP 2
    Blend the soft butter,sugar,eggs,lemon rind and little salt for 5 min with electic mixer.Add the flour,baking powder and the cinamon and pour the mixture in the cake tin.I use 20 cm cake tin,bottom loose.
  • STEP 3
    Peel and core the apples and drop them gently in the cake mixture.Fill up the apples with choped raisins mixed with sugar.Divide the butter in to 6 peices and put 1 peice on top of each of the apples.
  • STEP 4
    Bake in pre heated oven for 60 minutes.10 min before the end sprinkle the almonds on top of the apples.Put back in the oven for the last 10 minutes.
