Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 500g boneless, skinless chicken thighs
  • 300g small new potatoes
  • 425ml low-salt vegetable stock (such as Kallo low-salt vegetable stock cubes)
  • 350g broccoli, cut into small florets
  • 350g spring greens, shredded
  • 140g petits pois
  • bunch spring onion, sliced
  • 2 tbsp pesto

Method

  1. Heat the oil in a large, heavy pan. Add the onion, gently fry for 5 mins until softened, add the chicken, then fry until lightly coloured. Add the potatoes, stock and plenty of freshly ground black pepper, then bring to the boil. Cover, then simmer for 30 mins until the potatoes are tender and the chicken is cooked. Can be frozen at this point.
  2. Add the broccoli, spring greens, petit pois and spring onions, stir well, then return to the boil. Cover, then cook for 5 mins more, stir in the pesto and heat through.

Lovely and as others have said its really nice to have a casserole dish that isn't tomato based. I use all the ingredients listed however add a little extra stock, a bit more pesto and a couple of leeks and bung it all in the slow cooker on high for min 4 hours. (I chop up the chicken and potatoes to ensure they cook through). Saves me cooking anything first and becomes a really lazy but filling and tasty meal. A dollop of creme fraiche on top once served really enhances the dish even more!

Very easy to make and to speed up the cooking time, I cut the chicken and potatoes into smaller size. I didn't have any pesto so added chopped basil leaves with the greens and it was still very tasty, although it needed a bit more salt.

This is so easy to make and so surprisingly tasty as such a simple list of ingredients. I added a leak at the same time as the onion and then added kale, broccoli and peas for the veg. Some nice crusty bread goes down a treat as well. Highly recommended dish.

This has become a favourite! Really tasty and so nice not being a tomato based casserole! Don't worry if you don't like or don't have pesto, one time I forgot to put it in but it was still gorgeous! I've varied the veg too dependent on what I had in store/could get and it works well. :)

Made this as it seemed tasty and healthy. Very good although it didn't look to be at the beginning.
I added some carrots and I also used runner beans, peas and asparagus.
Instead if shop bought pesto I made my own, adding half a chilli which worked really well. Served with homemade garlic bread! Yum

This was so simple to make that I thought I had done something wrong. Both my partner and daughter love this dish. He never liked broccoli but has no problem with it here.

After it had finished cooking and was ready to serve I was thinking it wouldn't be very good because it didn't look great, but it was so tasty and much more filling than I thought it would be. Even my veg hating boyfriend finished his portion! A great dish to get your greens in!

Tried this but the pesto had gone mouldy so didn't have that mixed in. I'm not a veggie person an it looked unappetising but I really enjoyed it and after a bowl I was full.

Quick, easy and very tasty indeed! Added carrots and some garlic -- yum yum! Also froze the whole lot after adding green vege. Might be a bit mushy but I'm sure it'll be fine as there was plenty of juice.

We had this yesterday and it was delicious! So easy and tasty and the pesto adds something really special. Can't wait to have friends over to make it again - a great summer one pot.

Gorgeous recipe - used asparagus and leeks to bulk it out a bit. Absolutely lovely. Served with soured cream on the side and would probably serve with ciabatta or soda bread next time to mop up the juices :)

Nice tasting and healthy but the spring greens - even when shredded - added too much bulk and made for very messy eating. Next time I'd be inclined to use leeks instead, as others have suggested.

Love this recipe. Hearty, filling and healthy all at the same time - fab. Used all the veg suggested, only thing I did different this time was add an extra tablespoon of pesto. The dish was perfect!

Really nice. My only slight criticism would be that the quantities given were perfect for 2 adults, a 1 year old and a 3 year old. If I was making this for 4 adults I'd increase the chicken and potatoes.

Wow,although it looked to start bland I am now a fan and it's a firm favourite even for my kids who sulk at greens! 3 times a week I've made this.....time for a break lol,I did add a spoonful of mouse whipped cheese.Love it!!! Thankyou x

yet again another amazing recipe! i was bit dubious about making this dish, but gave it a go, added little bit of spinach and green beans as i didn't have any petits pois, added 1 clove of crushed garlic with the onion and also creme fraiche at the end, and it was amazing! so tasty. my other half doesnt like brocolli or spinach but loved it and cleaned his plate :D will definitely make again very soon.
