A rich, moist chocolate sponge with oreo buttercream filling, topped with cookie crumble. Great for birthdays!

  • For the cake:
  • 250g self raising flour
  • 250g light brown soft sugar
  • 50g cocoa
  • 250g dark chocolate
  • 250g butter
  • 4 eggs
  • For the filling and topping:
  • 154g pack of Oreo cookies
  • 250g butter
  • 3-400g sifted icing sugar
  • few drops vanilla extract
  • 1-2 tablespoons milk


    1. Preheat your oven to 160C/fan 140C/gas 3. Grease and line 2x20cm sandwich tins.
    2. Mix the flour, sugar and cocoa together. Melt the chocolate and butter and 200 ml water together over a low heat, then beat this along with the eggs into the dry ingredients.
    3. Pour into the two sandwich tins, and bake for approximately 40 mins, until well risen, and a skewer inserted in the middle comes out clean. Transfer to wire racks and allow to cool.
    4. While the cake is cooling, make the buttercream. Beat the butter until creamy, then add 300g of the icing sugar and vanilla. Mix well. An electric mixer is really useful here! You may find the mixture a bit dry - if so, add a tablespoon of milk at a time. If the mixture is too wet, add a little more icing sugar.
    5. Blitz all but one of the cookies in a food processor. Mix half of the cookie crumbs into the buttercream, and reserve the other half.
    6. Spread the butter icing between the two cakes, and over the top of them when sandwiched together. Sprinkle the remaining cookie crumbs over the top. You could add mini oreos to decorate of you like! Eat the reserved cookie with a glass of milk, to reward yourself for all your hard work!

Tastes lovely, my sponge was also quite dense and one of the sponges didn't rise properly. Overall it was good.

Made this yesterday! Divine! Very moist! I almost forgot 200ml of water which made it lighter than expected. Water should be added to ingredients list.

great cake tasted amazing and icing was delicious. My cake was a bit crumbly?? All in all, great cake, will definitely make again!!!!

Easy recipe however the cake can put very dense. Given all the positive comments going to give it another go

Despite the quantity of chocolate involved, the cake is reasonably light and crumbly. I made only half the quantity of icing because I don't like covering the sides of my cakes. This was easily enough for the middle and top cover.

I thought the cake and buttercream especially tasted lovely - but annoyingly my cake turned out a bit dense. Not sure what went wrong!

Do you melt water with the butter and chocolate because in the ingredients it doesn't say 200ml of water. If so is it hot, cold or boiling water? Or is that what goes in the pan? Could you do it in microwave?

I just tried this as a trial run for my son's birthday next week and it came out as flat as a pancake! Well, not quite but basically didn't rise at all. I split it between 3 tins as I want a 3 layer cake but surely that wouldn't make a difference? I gave the eggs a whisk to get some air in before adding them and the melted choc/butter/water to the dry ingredients. Should I have continued using (handheld electric) whisk as I gradually added everything together? I thought that would knock the air out so just "beat" in (not very energetically I admit) by hand. Everyone else seems to be able to do it perfectly?!?! Help!!!!?

Absolutely stunning cake recipe, this will be my go to recipe for chocolate cake from now on. Mine looks exactly like the picture !!! I followed the recipe exactly and the mixture fitted perfectly in to 2 20x4cm tins. Thank you so much tracinda

If I do not wish to add the dark chocolate, do I still have to melt the butter/water together? Thanks:)

Not tried it this way but I would still melt the butter and water together or it may change the resulting texture of the cake.

Gorgeous cake. I'm not one normally for buttercream but with the addition of the crumbed Oreo cookies it was delicious. From reading another recipe I tried putting some mini oreos at the bottom of the cake liner before adding the cake mixture and cooking and this gave it a really nice texture. I came runner-up in our work Bake-Off today with this! :)
