  • 4 good-quality pork chipolatas
  • 4 rashers smoked back bacon
  • 140g button mushroom
  • 6 eggs, beaten

  • 8 cherry tomatoes, halved
  • handful grated cheese (optional)
  • 1 tbsp snipped chives


  1. Heat the grill to high. Heat a medium non-stick frying pan, add the chipolatas and fry for 3 mins. Add the bacon, turning occasionally, until it starts to crisp, about 5 mins more. Tip in the mushrooms and continue to cook for a further 3-5 mins. Drain any excess fat and move the ingredients so they are evenly spread out.

  2. Season the eggs, then add to the pan, swirling to fill the spaces. Gently move with a fork for 2 mins over a low-medium heat until beginning to set. Scatter over the tomatoes, cheese, if using, and chives, then grill for 2 mins until set. Cut into wedges and serve with your favourite sauces.

The Spanish have been doing a similar thing for years: Tortilla. If you cannot grill. Place a plate over the cooked omelette, turn the pan and plate over and slide the omelette back into the pan. Cook until set 2-3mins.

Fantastic - my wife prefers this version as it minimises washing up. I still prefer to cook all the ingredients first then scrape onto a plate. Then cook the omelette (use some milk in the mix to lighten) - add the ingredients to the top half with loads of strong cheddar and ketchup, fold it over until cooked. I cut this into 2 and serve each portion as a sandwich between thick slices of granary bread (from an uncut loaf) which must be buttered with real butter! The filling oozes out when you take large bites - delicious! I have been known to put some slices of black pudding in as well (substitute HP for the ketchup in this case). For an interesting change put a teaspoon of Marmite into the filling.

A really nice breakfast and easy to make, loved it! A little tip with regards to eggs and camping: before we leave the house, I crack all the eggs into an empty plastic bottle and keep in the cool box until needed. Saves having to worry about them breaking whilst driving!
