  1. Place the ginger, sugar and lemon slices in a pan with 150-200ml water. Bring to the boil, then cook until the sugar dissolves. Take off the heat, leave to cool, then press through a sieve.

  2. To serve, pour into a pitcher and top up with sparkling water and extra lemon slices.

Absolutely delicious and so quick and easy to make. I could drink this all day! Next time I will add a little more ginger or possibly grate what I do use to get a bit more of the ginger flavour through. Would also like to experiment with using less sugar and replacing it with something a little less unhealthy.

There is now a wide range of what Tom Kerridge refers to as ‘ granulated sweeteners’ Which are no calorie! Go figure. Try Sainsburys’ Other supermarkets are available!

Fantastic drink. I add 1 lime to the mix and I keep it for a bit longer so that it becomes more syrup-y and its amazing. Even now in the winter we love it :)

delicious and easy. will reduce sugar next time. mixed with apple juice and and elderflower for a change. very useful to keep in fridge and experiment.

Can this be frozen in its cordial form?
