Recreate the oil slick noodles you get in restaurants. Helena says she's far too lazy to make biang biang noodles so uses pappardelle as a good substitute

Method
-
step 1
Cook the pappardelle in lightly salted boiling water according to pack instructions.
-
step 2
Meanwhile, put the lemongrass, garlic and ginger paste, chilli flakes, soy sauce and spring onions in a large heatproof bowl. When the noodles are nearly cooked, pour the vegetable oil into a small saucepan on a medium heat. Heat until very hot (it should nearly be smoking) before quickly pouring it into the lemongrass bowl. Mix well, leave to stand for a minute or so, then stir through the pappardelle and the chives.
-
step 3
Serve in large bowls with a sprinkling more of chilli flakes on top and a soft-boiled egg, if you like.
