  • 6 large limes
    trimmed and cut into chunks (skin left on), plus 1 lime cut into wedges, to serve

Method

  • step 1

    Put the lime pieces, most of the mint, the sugar and 500ml cold water in a blender, and pulse briefly to just break down the limes without overblending (doing so can make the peel taste bitter.) Strain into a large jug through a fine sieve, pressing down on the mixture using a spoon to extract as much liquid as possible. Discard the leftover pulp.

    Pour the lemonade mixture back into the blender along with a large handful of ice and the condensed milk, and blitz until smooth and creamy. Taste and add more sugar, if needed.

  • step 3

    Lightly clap the remaining mint leaves between your palms to release their oils, then stir into the pitcher. Serve immediately in ice-filled glasses with extra mint leaves and lime wedges.
