Make this summer salad on the barbecue – the juices from the fruit will absorb into the bread, resulting in fantastic flavour

Take inspiration from limonada suíça, a refreshing ‘lemonade’ from Brazil made with limes. It’s sweetened with condensed milk giving ice cream soda vibes

Put the lime pieces, most of the mint, the sugar and 500ml cold water in a blender, and pulse briefly to just break down the limes without overblending (doing so can make the peel taste bitter.) Strain into a large jug through a fine sieve, pressing down on the mixture using a spoon to extract as much liquid as possible. Discard the leftover pulp.
Pour the lemonade mixture back into the blender along with a large handful of ice and the condensed milk, and blitz until smooth and creamy. Taste and add more sugar, if needed.
Lightly clap the remaining mint leaves between your palms to release their oils, then stir into the pitcher. Serve immediately in ice-filled glasses with extra mint leaves and lime wedges.
