Take your sprouts to the next level with these chilli-charred Brussels sprouts. Pan-fry the sprouts in garlic, chilli flakes, olive oil and lemon juice. Finish this vegan side by topping with lemon zest. For something less spicy, substitute the chilli for flaked almonds and black pepper.

Crushed roots with walnut & mace butter
Our extra special crushed roots with walnut & mace butter is packed full of Christmas flavour. Microwave celeriac, swede, carrots and sweet potatoes until softened, then use a potato masher to make a coarse mash. Mix in ground mace, butter, crushed walnuts and scatter with finely chopped parsley.

Healthy stuffing balls
These delicious healthy stuffing balls are low in fat and vegetarian. Cook onion, celery and garlic in a shallow saucepan, then blitz with dried apricots, peeled chestnuts, almonds and wholemeal bread in a food processor. Whizz in one egg, chopped parsley and dried sage. Form into walnut-sized balls and bake for 30 minutes.

Hazelnut & mustard carrots
Add extra festive flavour to your Christmas veg with these hazelnut & mustard carrots. Toast hazelnuts in a dry, non-stick pan, then chop or crush using a pestle and mortar. Whisk Dijon mustard, red wine vinegar, dry sherry and vegetable oil together to create a dressing. Boil the carrots until tender, then mix in the dressing and scatter the hazelnuts over the top.

Brighten up your Christmas table with this vibrant stir-fried festive cabbage. To easily shred the red cabbage, use a food processor with a shredder attachment or a mandoline. Stir-fry the cabbage with shredded kale or sliced cavolo nero and toss with cranberry sauce, red wine and orange juice.
