Banana & chocolate chip vegan loaf

This recipe is the perfect excuse to use all those ripe bananas left over in your kitchen

What you'll need
  • 3 bananas, peeled and mashed
  • 175g light brown sugar
  • 100ml vegetable oil
  • 10 ml Dr. Oetker Madagascan Vanilla Extract
  • 1 tbsp maple syrup
  • 250g plain flour
  • 2 tsp Dr. Oetker Baking Powder
  • 125g Dr. Oetker Dark Jumbo Chocolate Chips
Method

This recipe is great for using up those over ripe bananas.

1.  Heat the oven to 180C/160C fan/gas 4. Grease and line a 2lb loaf tin. In a bowl, mix together the bananas and sugar until they are creamed together.

2.  Add the oil, Dr. Oetker Madagascan Vanilla Extract and maple syrup, then mix thoroughly. Sift in the flour and the Dr. Oetker Baking Powder, then fold the mixture until fully combined. Finally, mix in 100g of the Dr. Oetker Dark Jumbo Chocolate Chips.

If I have some in the cupboard I will add a few dollops of Biscoff spread into the mixture before baking and swirl through which gives a lovely caramel flavour.

3.  Pour the mixture into the prepared loaf tin and bake for 45-50 mins, until a skewer inserted into the centre comes out clean. Remove from the oven and place on a wire rack to cool.

4.  Melt the remaining Dr. Oetker Dark Jumbo Chocolate Chips in the microwave, then drizzle over the top of the loaf. Allow to set before slicing and serving.
