Ingredients

  • 2 oranges, plus zest and juice of 1
  • 3 carrots, halved lengthways and sliced with a peeler
  • 70g bag rocket
  • 2 avocados, stoned, peeled and sliced
  • 1 tbsp olive oil

Method

Cut the segments from 2 of the oranges and put in a bowl with the carrots, rocket and avocados. Whisk together the orange juice, zest and oil. Toss through the salad, and season.

This recipe is fantastic, simple fresh and light and perfect if you want to jazz up your rocket for serving.
I put this alongside the Super Healthy Salmon Burgers as a starter for a meal... empty plates all round!

We really liked the different combination of flavours in this salad. I thought the dressing had too much orange juice in so will probably put in a bit less next time.
