Thai burgers with salsa & sweet potato wedges

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Toss the potato wedges with 1/2 tbsp olive oil. Put on a baking tray and sprinkle with salt. Bake for 20-25 minutes until tender.
  2. Meanwhile, mix together the pork, curry paste, grated onion and half the coriander. Season and form into 4 burgers. Brush the burgers with a little oil then grill or griddle for 5-6 minutes each side until they are cooked through.
  3. For the mango salsa, mix the mango, chilli and the rest of the coriander with the lime juice. To serve, put a burger on top of some little gem leaves and spoon over some salsa. Serve with the sweet potato wedges.

    These are great. Nice and juicy and the salsa makes the dish taste really fresh. I drizzled sweet chilli sauce over everything as well and it tasted fantastic!

    This was absolutely delicious!! Had never done sweet potato wedges before and they were fab. The burgers were beautiful and the salsa set them off perfectly. Quick and easy too!! Try it!

    Absolutely fantatic. The combination of heat from the burgers with the salsa is amazing. Served on toasted ciabatta with a salad. LOVE IT.

    So so easy and absolutely delicious. For a change one night I made with pesto instead of curry paste and served with potato wedges and salsa. Either way, big favourite in our family for simple, tasty week night dinner...

    We loved this. Simple to make and great tasting too . Was not convinced the salsa would work but next time I will have to make more as it really did! I do have 2 issues.... 1) my burgers did not stick as well together as hoped - I might try refridgerating before cooking next time. and 2) the wedges were soft and not crispy, although the sweet potato flavour went well with the rest of the dish. All in all I will definately try again and if it gets any better than last time I will need to give it 6 stars!

    really should have made the salsa. um'd and arh'd and decided against as didn't have much coriander but the burgers, although nice, lacked something...figured that was the salsa! Will try again though.

    Used turkey mince instead of pork and couldn't tell the difference (halved the cost though;-)). Kept their shape on the BBQ and were great. Made a tomato, red chilli, lime and coriander salsa as I thought the mango would be too sweet - will def do again.

    We have made these in our household more times than I care to admit!! We add the other half of the red onion to the salsa to stop it being too sweet with the mango and its lovely! Even my three year old loves it!

    Really enjoyed this - was worried my husband wouldn't like it as it isn't a 'normal' burger but he thought it was great - I lovely mango in a savoury setting - the chili and the lime stops it being too sweet. Only thing was found the burgers didn't want to hold together enough - needs some binding power in there.

    Agree with Beth that binding was a problem first time - tip: add an egg and they hold together beautifully! An extremely tasty dish with some light and zingy flavours - went down VERY well at our BBQ in the summer....
