Ingredients

  • 1 kg boneless chicken thighs
  • 1 red onion, halve slices
  • 200 grams , slices
  • 1 courgette, cut in large cubes (inch)
  • 1 red paprika
  • 700 grams middle sized tomatoes cut in 4 parts
  • 1 lime, juiced
  • 2 tbsp, morrocan mixed spices
  • 1 cube 1 inch ginger
  • 3 cloves garlic,
  • Half hand cut fresh mint
  • Half hand cut fresh parsley
  • 700 ml chickenstock
  • Olive oil

Method

  • STEP 1
    Preheat the oven 180c
  • STEP 2
    Heat the olive oil in a large pan, when hot add garlic, ginger, onions, mushrooms and paprika
  • STEP 3
    When nice and brown add morrocan spices, stir for one minute, add tomatoes and cook stiring now and than untill tomatoes are soft
  • STEP 4
    Add chicken stock and limejuice, add salt and fresh pepper cook for another 5 minutes set aside
  • STEP 5
    Meanwhile cut the thighs in half, put salt and pepper on both sides
  • STEP 6
    Heat olive oil and saute the chicken golden brown. Set aside
  • STEP 7
    Put again Olive oil in a pan and saute courgette untill brown.
  • STEP 8
    Put the chicken and courgette in large casserole cover with the sauce.
  • STEP 9
    Add mint and parsley and Cook for another 30 minuten in a oven 180c
