Ingredients

  • 4 skinless chicken breasts
  • 2 tbsp olive oil
  • 4 rashers smoked bacon
  • 2 avocados
  • 4 ciabatta rolls, split
  • 4 thin slices of your favourite cheese
  • 4 small handfuls baby spinach leaves
  • mayonnaise, to serve (optional)

For the cajun seasoning

  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp paprika

Method

  1. Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.
  2. While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.
  3. To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

Excellent. Really really tasty, I save 5 starts for something exceptional or it'd get it. Use an extra rasher of bacon per burger

Had these the other night with a watercress, rocket and spinach salad, it was lovely! Didn't have the bacon on it, didn't really think it needed it. Saved some calories too.
Avocado worked well, and made the burger really creamy!

Delicious! Will most definitely be making this one again! Yum!

Cooked for the second time, added a wee bit more punch with a few chili flakes and it was absolutely perfect for me, alongside some homemade chunky chips and sweetcorn. Heaven in a burger.

Best burgers I have ever had! Massive hit with my family and my sister-in-law actually said it was better than the burger she normally gets from Nando's!! These will definitely be a regular thing from now on, thank you 11/10

This is a lovely recipe and I was especially pleased about how easy it was to make the cajun seasoning! Instead of slicing the avacado, I mashed it up with chopped tomato, added salt & pepper and a squeeze of lemon then spread it on the side of the ciabatta. For extra bite I also added a few jalepenos!

Delicious! Partner and I loved it, especially the way the advocado is inbetween the chicken. I will definately be making this again. We also had some left over chicken so had it in a salad for lunch the next day.

Absolutely fantastic recipe!l A huge hit with all the family, I've never been able to fins the ciabatta rolls but just use ordinary crusty rolls, granary rolls are especially good with the burgers too

Everyone loved it!

For my fussy boyfriend I added lettuce and tomato and doubled up on the bacon.

I also allowed the chicken to marinade for a while and then cooked them!

Talking healthy? I've cut out the bun with burgers. I slice a large w/m pitta across the middle and stuff burgers into the pockets. You need to slather on any sauce, mustard or relish beforehand, tho'.
