For the cajun seasoning

Method

  1. Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.

  2. While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.

  3. To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

These were absolutely delicious! We found the chicken & avocado sliced together was too big for our ciabatta buns so we ended up smashing the avocado into the bottom bun, sort of like a chunky guacamole, and then layering the chicken on top. We used a strong cheddar for the top and melting it onto the bun was a great idea. I had mayo with mine, it was amazing - these will definitely be a regular and I cant wait to try cooking the chicken on the BBQ. We served with Caesar salad, onion rings and smashed new potatoes.

This is such an easy and delicious lunch - I love it. Great served with a side salad or chips for a main meal.

really nice burger! skipped the coriander since i belong to this people that taste soap when they eat coriander. the whole idea was nice and when executed was really satisfying. I cant really understand the (only one I think) negative feedback i saw.

Absolutely lovely dish. I made this for a typical weekday dinner at it was no fuss at all. I am gluten intolerant so I generally don't go for burgers, so I diced and tossed the bacon, chicken, mozzarella, avocado and tomato in some baby leaf salad. I added a little honey and mustard salad dressing too and served with homemade oven chips (Gordon Ramsay’s recipe from the Good Food website). It was amazing and my wife loved it. Definitely making it again.

So incredibly easy to make and so incredibly tasty! I used guacamole rather than sliced avocado but that is just because I had some left over. A truly tasty treat of a meal that took no time to make at all - you have got to try it!!! (the chicken I imagine would be even better on a BBQ)

These were so tasty, my Mum and I loved them. So simple to make! I gave them a little longer than 5 minutes on each side, and we cut the buns in half once assembled which made them easy to eat too. I also skipped the bacon, just as a preference. Will definitely be making again!

I made this (without the cheese) but baked the chicken for half an hour instead and it came out beautifully juicy. Really enjoyed and will definitely be making again.

both my husband and i found this pretty bland once put together as a burger. Chicken seasoning on its own was ok. Wouldn't bother making this again was pretty dissapointed

expected this to be much nicer than it was. Although the seasoning on the chicken was tasty once put together to make the burger both my husband and myself thought it was pretty bland. It was ok but i wouldn't bother making it again

Excellent. Really really tasty, I save 5 starts for something exceptional or it'd get it. Use an extra rasher of bacon per burger

Had these the other night with a watercress, rocket and spinach salad, it was lovely! Didn't have the bacon on it, didn't really think it needed it. Saved some calories too.
Avocado worked well, and made the burger really creamy!

Delicious! Will most definitely be making this one again! Yum!

Cooked for the second time, added a wee bit more punch with a few chili flakes and it was absolutely perfect for me, alongside some homemade chunky chips and sweetcorn. Heaven in a burger.

Absolutely loved this! We used guacamole (using the best-ever chunky guacamole recipe from BBC Good Food), an extra slice of bacon and added some chilli flakes to the seasoning. Will be making this again.

I make this all the time and we absolutely love it. However I had grown a bit tired of the avocado bite so quite often I'd skip the avocado on my burger. We had run out of mayo one week so I decided to mash up the avocado and top the burger with that, it was great! A great substitute for the mayo and no chunky avocado!

I also serve with harissa sweet potatoes also found on here!
