  • 100ml double cream
  • 200g smoked salmon, cut into strips
  • small bunch chives, snipped


  1. Heat the butter in a large saucepan and add the leeks and bay leaf. Cook over a low heat for 8-10 mins or until the leek is really soft, then stir through the potatoes until coated in the butter. Pour over the stock and cream and bring to the simmer, then gently bubble for 10-15 mins until the potatoes are really tender. If freezing at this stage, slightly under-cook the potatoes, then defrost and bring back to a simmer to finish cooking them and continue the recipe.

  2. Add two-thirds of the smoked salmon, stir through and season. Serve the soup in deep bowls with the remaining smoked salmon and snipped chives on the top.

Fantastic dinner party starter! Stuck to the original recipe however, replaced the double cream with low-fat cream. This recipe is easy, can be prepared ahead of time and tastes special. Oh and the fresh chives are essential!

I made this last night. We had it with focaccia bread and it was heavenly. I made a couple of changes..

1. Substituted bacon for salmon as I did not have any salmon. I dry fried the diced bacon before adding to soup.

2. Added 150 ml double cream instead of 100 ml

I really like this recipe - very tasty! Also it can easily be adapted for vegetarian friends as the smoked salmon can be added after the soup has been cooked and, of course, by using veg stock instead of chicken.

this recipe looks fab,though with large knob of butter and double cram can anyone tell me which bit of this soup is low fat!

YUM! Tried it once and planning to use it for Xmas when hubby's family is around. Adding a slight bit of turmeric and cayenne for a subtle bite. Halving the potato and replacing with kumera/ sweet potato. Maybe adding small lobster-tails??

Delicious and very easy to make. I added two green chillies to give it a kick and at the end added some prawns. Thumbs up all round from my dinner guests.

I also made this as a practise before Christmas and it was delicious. A friend has also made it and she really enjoyed it too. I ran the blending stick through mine before adding the salmon and it worked fine. Will definitely be making it again, very tasty.

I have made a similar soup before. I add a little saffron and some sweetcorn sometimes. It makes it a lovely golden colour. Also, one day I used a package of kippers that needed to be used up instead of the smoked salmon and it was gorgeous. It gave a lovely smoked flavour without being overwhelming. The smoked salmon trimmings are good for this recipe, much cheaper.
