Stilton on toast with pickled pears

Take plain old cheese on toast to a new level with this clever idea

Method

  1. Bring the vinegar, sugar and chilli to a boil, bubble for 1 minute. pour over the pear slices and cool. Mash the stilton with the butter and port.
  2. Spread on the toast and grill until browned. Serve with the pears.

  • 1 dried red chilli , crumbled
  • 1 large pear , peeled and cut into thin slices
  • 100g Stilton
  • 20g butter , softened
  • 1 tbsp port (optional)
  • 2 large slices bread or 4 small slices, toasted
