  • 2 tbsp red pesto
  • crusty bread, to serve


  1. Heat the oil in a large pan and cook the shallot for 4-5 mins until softened. Pour in the wine, add the chilli flakes and bubble for 2 mins.

  2. Add the mussels. Cover and cook for 5 mins until all the shells have opened. Discard any that remain closed. Stir in the red pesto and toss well. Tip into a large bowl and serve with crusty bread.

This is a nice way to have mussels, particularly if you like a bit of spice! When I make these next time, I will fry some celery, carrot and garlic along with the shallots, for some added vegetable presence.

Did this ... not with live mussels but with shelled mussels already prepared, we found it absolutely delicious ... I did add a few prawns and flash fried them with the mussel meat, then put them in the Red Pesto sauce ... crusty bread and butter ... lovely
