Method

  1. Heat oven to 190C/170C fan/gas 5. Brown the pork in a non-stick frying pan over a high heat for 4-5 mins, turning twice. Mix the oil, 2 tsp cumin, cinnamon, 2 tsp ginger and some seasoning, then rub all over the pork. Transfer to a roasting tin and roast for 30-35 mins or until the juices run clear when the thickest part is pierced with a skewer.

  2. Mix the couscous with the remaining cumin, the sultanas, lemon zest and juice, then season and pour over 400ml boiling water. Stir well and cover for 5 mins, then stir in the mint.

  3. Stir the remaining ginger and a little seasoning into the yogurt. Thickly slice the pork and serve with the couscous and ginger yogurt.

Delicious, all the flavours work really well together. I added ras-el-hanout instead of just cumin and also added mint to the yoghurt as well.

Fantastic! Cooked 1.1kg it served 4 adults and 3 children. Everyone loved it. I'll definitely cook this again. It went perfectly with the couscous and ginger yoghurt. Needed 5 mins longer than stated but could be my oven. Definitely one to add to my regular list.

The spiced rub was very tasty with the pork but would add some stock to the couscous next time. Would definitely make again.

been a long time since i had a nice meal hopefully this will be a good one...my boys don't like couscous so i'll put mashand broccoli on the side..umm!! can't wait

good flavours on the pork but would make couscous with chicken stock instead of water next time. I also like cranberries through it instead of raisins.

Simply delicious. I wasn't to sure at first if there would be enough on our plates to fill us up but it was fine. A very easy dish to do and will definitely be added to my regular dishes.

Cooked this for a dinner party and everybody loved it! The meat was fantastic, really tender and great flavour. The ginger yogurt tasted amazing too! Will be definitely making this again.

I notice someone says the soy sauce makes the meat moist but there is no mention of soy sauce in ingredients list or method??
