  • 4 boneless, skinless salmon fillet, about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste

For the salad

  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar


  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.

  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

I am just about to make this for the second time. They are amazing! I made them with sticky rice, I do have to say that it would be better with 2 of the burgers as 1 wasn't quite enough for a filling meal. But really great, I'm just going to double the recipe!

Burgers are light, tasty and very easy to make, so is the salad. Served the burgers with soured cream and french fries.

This has become a weekly recipe. I add sweetcorn to the mixture and use rice vinegar for the salad. They hold together well but care has to be taken not to add too much soy sauce. I also dust them with flour before frying them.

Just rustled these up for dinner. Great flavours. Found they didn't hold to well but when placed in the frying pan they bound together. Served with fennel and cucumber salad (also on and rice.

Fish cakes had lovely Thai flavour. I added a couple of potatoes to mine to make them go further. Salad was beautiful, I did my dressing with sushi vinegar and a little cold water. Delicious .

Just tried these for the first time as part of my 5:2 Intermittent Fasting diet and they are definitely a winner. I made the meal including the salad to be 336 calories. As other people have said, as well as being really tasty, these hold together really well in the pan. I chose to make 2 thin cakes per person as I wanted them more crunchy.

These burgers are very easy to make and full of flavour - they are much lighter than a heavy fish cake. We loved the fresh Thai flavours. I didn't make the salad but instead served with roasted sweet potato, steamed veg and sweet chilli sauce.

Very yummy. Grilling them is definitely better if you are willing to be patient ( in my opinion) also added some spring onion and chillies to the mix for extra flavour. Served with homemade tzatziki. Winner

This is a delicious recipe! But I did some changes: didn't have red curry paste, used the green one instead. I think that gives it a more sweet flavor, and only used half of the amount.
Also I made two burgers per each amount of salmon, so easily doubles with same amount of ingredients if you want to serve smaller portions.

Have always failed at fishcakes in the past but these are delish and easy. Use a pastry ring to fill and you will have perfect cakes. The entire recipe is clean, filling, healthy and yummy. Have made twice this week !

An excellent recipe spoiled only by being only able to get Tesco's own Red curry Paste, which doesn't come close to the real McCoy. It was still very good, but a bit of a let down. Lessons will be learnt!

Cooked this for a picnic with my boyfriend, and we loved them! Was a bit iffy about using the curry paste and so substituted it with tomato paste, and it feels like we missed out =( Will definitely muster up the courage to try it next time!
