Ingredients

  • 4 boneless, skinless salmon fillets, about 550g/1lb 4oz in total, cut into chunks
  • 2 tbsp Thai red curry paste
  • thumb-size piece fresh root ginger, grated
  • 1 tsp soy sauce
  • 1 bunch coriander, half chopped, half leaves picked
  • 1 tsp vegetable oil
  • lemon wedges, to serve

For the salad

  • 2 carrots
  • half large or 1 small cucumber
  • 2 tbsp white wine vinegar
  • 1 tsp golden caster sugar

Method

  1. Tip the salmon into a food processor with the paste, ginger, soy and chopped coriander. Pulse until roughly minced. Tip out the mix and shape into 4 burgers. Heat the oil in a non-stick frying pan, then fry the burgers for 4-5 mins on each side, turning until crisp and cooked through.
  2. Meanwhile, use a swivel peeler to peel strips of carrot and cucumber into a bowl. Toss with the vinegar and sugar until the sugar has dissolved, then toss through the coriander leaves. Divide the salad between 4 plates. Serve with the burgers and rice.

I have made this recipe many times and it has alway been delicious. It is quick, healthy and really tasty. It's remarkable how the salmon manages to hold together with no binding agent. A highly recommended recipe

Extremely tasty and healthy burgers that are very simple to make. These will become a regular dish in our house. I also served them with rice & soy sauce!

Got a bit messy making these, but well worth it. Served them with rice and salad. Found it a much more interesting way to enjoy salmon. Boyfriend loved them too. Will be a regular in our house.

This has become a huge favourite between my partner and I! We have these at least once a week. I add spring onions to the salmon burger and garlic - this makes it extra scrummy!!
We usually serve ours with sweet potato wedges dusted with smoked paprika, cumin and salt and pepper!

Delish recipe, really flavoursome and a nice alternative way to have salmon. I made extra and froze them (prior to cooking), these were just as nice when defrosted and cooked. Served with green beans and brown rice.

These were brilliant. I put a little bit too much paste in as I had less salmon than suggested, which made it slightly soggy but I think had I put a small amount less it would have been perfect. Will definitely be making again! Highly recommended.

I made this recipe for the second time tonight and really enjoyed it again. We don't have a food mixer so I chopped everything as small as possible and grilled as patties. There were a little wet but just turned down the heat and flipped them over to ensure they were cooked. Can't recommend more!

Coated these with panko breadcrumbs and they cooked beautifully. Must make again!

They were too soggy, i wish id used my brain and added some flour or breadcrumbs
they were also quite heavy so i doubt that i will cook them again though they tasted amazing

Great fishcakes! So easy to make and very tasty. Added a small amount of flour to firm them up a bit and they held together well when frying.

Really yummy, healthy and super easy to make. Didn't crumble like fishcakes i've tried to make before. Used green thai curry paste instead of red because that's all I had in the fridge, but it worked fine, not too spicy. Lovely with brown rice cooked in stock and a salad!

These burgers were really easy to make and were a nice change from plain old grilled salmon. The texture looks a bit spongy but taste is great!

5/5 - delicious!

I added spring onions, garlic powder, black pepper and lemon juice with sweet chilli dipping sauce to the side. Also used green thai paste as I already had it in the fridge. As others have said, they are rather soggy when you first put them in the pan but they do hold their shape well. One burger would not have been enough for us so we used the above recipe for 2 with salad and wedges. Highly recommend for a tasty and healthy quick dinner!
