Method

  1. Heat oven to 200C/180C fan/gas 6. In a large bowl, mix the spinach, spring onions, cherry tomatoes and garam masala with a grinding of pepper.

  2. Lay out a sheet of filo and cut it lengthways into 3 long strips. Brush roughly with the oil – don’t worry about covering the whole sheet. Spoon tablespoons of mix onto the top of each strip and fold each over into a triangle. Keep folding until each strip of filo is used up. Brush with any remaining oil, then bake for 20 mins until golden and crisp.

  3. To make the salad, toss all the ingredients together and serve alongside.

If you cannot abide spinach then broccoli is a lovely green and healthy substitute (cooked and chopped first, of course).
I rarely copy recipes slavishly nor reject those with an ingredient that does not appeal to me. I simply change it and find that it, mostly, works well.

I made this with 240g fresh spinach, added another 2 spring onions and about 10/12 cherry toms. Had tones of filling and used up a whole packet of filo. I did double the sheets of filo though as my first attempt kept cracking. Also used melted butter after the oil on the first one and this worked much better. Would definitely do again as lovely alternative to normal samosas.

Agree with Ruth - filling is unpleasant. Just tastes like watery spinach. I even tried adding to feta to some and that still didn't fix it.

I really enjoyed this Recipe and I loved making it - so easy!
Mild taste but yummy hot and cold, great for pack lunch.
I have made a batch and popped them in the freezer.

is this a recipe for Indian samosas? if yes,then why arent these alleged samosas shaped like "samosas"? and wouldn't it be better if we had the traditional potato or meat filling for the samosas instead of spinach....if you are looking for a "healthy samosa" isn't a filling made out of chicken breast strips healthy and delicious?

shouldn't we temper mustard seeds in oil rather than eat them raw in a salad?or make a paste out of mustard seeds and then use them?or did you mean mustard greens and not mustard seeds?

To be fair, you have clicked on a spinach samosa recipe, hence the spinach filling. And surely you can shape them however you want? ;-)

i thought the filling was awful and didn't think the filo pastry worked very well either. It tasted like limp spinach with bits of curry powder on it. Wouldn't make again.
