Ingredients

  • 300g farfalle or other pasta shape
  • 3 tbsp reduced-fat mayonnaise (use full-fat if you prefer)
  • 1 heaped tsp wholegrain mustard
  • 1 tsp clear honey
  • 300g cooked chicken, torn into rough pieces
  • 4 spring onions, thinly sliced (or use ½ red onion, thinly sliced)
  • small bunch basil, leaves roughly torn
  • 4 tomatoes, quartered, then each chunk halved

Method

Boil the pasta, then cool under running water. Mix the mayo, mustard and honey in a large bowl and loosen with a little water to make a dressing the consistency of double cream. Add the pasta, chicken, onions, basil and tomatoes, season to taste, then gently mix together.

ummm Yummy, just made this for my lunch tomorrow at work and really looking forward to it, just had a sneaky taste and it is yummy and low in fat

This was a perfect meal for dinner on a warm summers evening. I did put in two spoons each of the mayo, mustard and honey. Just so I had a bit more dressing, after reading other people's comments about it being dry.

This went down a storm though and will do it again as it was so quick and easy. It would also be perfect for picnics & BBQ's

Lovely salad! I put mustard seeds instead of mustard and also added sweetcorn. Oh and I put much less onion, and thought it was oniony enough.

Didn't change a thing, tasted lovely and will defo have it again!

Would be great at a barbecue or with baked potato....nummy!!

I added a small tin of drained sweetcorn when I prepared the recipe for our wedding anniversary. My husband who will not eat mayo absolutely adored it!

This is lovely. Not normally a fan of mustard but the dressing was yummy. Didn't have any basil and had run out of onions so substituted with a red pepper. Have packed remainder up to take to work....can't wait :)

i made this in 15 mins and thought it was very good. be carefull not to add too much mustard because it ruins the dish. make with bits of ham aswell

This is a great way to use up leftover chicken! Didn't have any basil or spring onion so did it without and it was still lovely. Made the sauce using creme fraiche instead of mayo as I didn't have any and this worked fine too. Yummy, looking forward to it for lunch tomorrow!!

I love this dish, have added all sorts in the past, including peppers, mushrooms and bacon. I can't have it cold though, got to be warm...mmm.... :o)

As I live in Greece I'm always looking for something simple for the hot evenings here.....& this is just the thing! I poach chicken breasts with some "Chicken Seasoning" & leave to cool in the water, which keeps the meat nice & moist. Don't find spring onions here very often, so use sliced red onion & I always add a couple of thinly sliced Roasted Red Peppers in Oil (a very useful Greek product).

We substituted the honey with mango chutney, which gave it a really nicer and sharper taste.
