Leila's Blueberry Muffins

Ingredients

  • 60g butter
  • 115g Caster Sugar
  • 2 medium eggs
  • 250g Plain Flour
  • 2tsp Baking Powder
  • 125ml milk
  • 150g blueberries
  • Pinch of salt
  • Muffin cases and tray

Method

    1. Cut the butter into small cubes. Put in a mixing bowl together with Caster Sugar. Use a wooden spoon to cream the two together.
    2. Crack and add one egg, beating it into the mixture. When the egg is absorbed, repeat the process with the second egg.
    3. Put the flour, baking powder and a pinch of salt into another mixing bowl and gently sift together.
    4. Now add small amounts of the "dry flour" mixture and the milk to the original mixture, giving a good stir each time Keep doing this until all the "dry flour" and milk has been used up, and the mixture is smooth.
    5. Finally add blueberries and stir well
    6. Line the tray with muffin cases and spoon in the mixture. Bake in an oven preheated to gas mark 4 (or 180 degrees celsius) for twenty-five minutes.

Yup, mine came out shiny too - looked like they'd been varnished
Taste reminds me of Digestives too - not great :-(

Very nice! But I too had a shiny/smooth texture on top the muffin. Is this right or an I doing something wrong??

Really exceptional recipe. Kudos to Leilz100 for coming up with this recipe. Managed to make 5 medium sized muffins and 7 smaller ones in silicone casings. Feedback from friends that there ought to be more blueberries, but this depends on personal preference. Not sure if this was supposed to happen, but all of mine came out with exceptionally smooth and some what shiny muffin 'hats'. Might not be everyone's cup of tea, but definitely was mine! Aesthetically pleasing, which gives this recipe plus points. More importantly, it is absolutely delicious - not too sweet, not too bland either. Quite light and healthy tasting. Managed to have one myself, packed the rest up to give away. Will be attempting this with other fruits (e.g. strawberries, raspberries etc); maybe even chocolate covered raisins? (; Fantastic.

This is a brilliant recipe... I made it the night before and then had fresh baked blueberry muffins for breakfast- mmm! I have also added chopped apple and a bit of cinnamon instead of blueberries which was delicious- fancy trying raspberry and white choc too.

if i used raspberries, blackberries or chocolate, would the recipe be the same?

I have made this recipe every week for the last four weeks.They are easy, tasty and goes down well with everyone. I did them for my daughter's sleepover but used three lots of chocolate and everyone loved them. Thank you.

I made these muffins last night and they were delicious, I didn't alter the recipe in any way. I would like to try making them with chocolate next time just to see if they turn out as good but I will definitely make them again. Thanks for putting the recipe on GF.
