Leila's Blueberry Muffins

Method

  1. Cut the butter into small cubes. Put in a mixing bowl together with Caster Sugar. Use a wooden spoon to cream the two together.
  2. Crack and add one egg, beating it into the mixture. When the egg is absorbed, repeat the process with the second egg.
  3. Put the flour, baking powder and a pinch of salt into another mixing bowl and gently sift together.
  4. Now add small amounts of the "dry flour" mixture and the milk to the original mixture, giving a good stir each time Keep doing this until all the "dry flour" and milk has been used up, and the mixture is smooth.
  5. Finally add blueberries and stir well
  6. Line the tray with muffin cases and spoon in the mixture. Bake in an oven preheated to gas mark 4 (or 180 degrees celsius) for twenty-five minutes.

    I made these muffins last night and they were delicious, I didn't alter the recipe in any way. I would like to try making them with chocolate next time just to see if they turn out as good but I will definitely make them again. Thanks for putting the recipe on GF.

    I have made this recipe every week for the last four weeks.They are easy, tasty and goes down well with everyone. I did them for my daughter's sleepover but used three lots of chocolate and everyone loved them. Thank you.

  • 250g Plain Flour
