Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 400g can chopped tomatoes
  • 1 heaped tsp light, soft brown sugar
  • few sprigs thyme, leaves stripped
  • 1 tbsp soy sauce
  • 4 cod, fillets (we like No Catch) or another white flaky fish, such as pollack

Method

  1. Heat the oil in a frying pan, add the onion, then fry for 5-8 mins until lightly browned. Stir in the tomatoes, sugar, thyme and soy, then bring to the boil.
  2. Simmer 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

The whole family enjoyed this one. I even left out the soy sauce so i could blitz for the baby (we added it afterwards for the rest of us). Served with crispy potatoes, a great way to up the fish quota.

Tried this last week and added a few chopped capers, finely shredded fresh basil leaves and a handful of cherry tomatoes (halved) just at the end of cooking. Served it on a bed of farro & beans - really delicious, filling and healthy; children loved it with rice. Cooking it again tonight .

This is a firm family favourite , absolutely delicious with so little effort , especially good for a weekday dinner. Have tried it with salmon , not bad however it 's much nicer with white fish .

Delicious! Served with rustic kalamata olive bread, flowering broccoli & fine green beans. A great base dish which you can customise!

Really good and easy - followed some one else and used lemon thyme and enough sauce for four when only cooking for two. However a little splash of white wine and plenty of salt and pepper made it very tasty !

Loved this recipe, I usually prefer very intense tomato sauces but this one is delicious. We have tried it with haddock and chicken and it was good with both. We had it with new potatoes crushed with peas from another fish recipe and they went well together. This will be a regular dish for us.

Excellent. We tried this with a tomato and chilli sauce (commercial one) as had no chopped tomatoes. It was lovely! Will definitely cook it again.

Cooked this dish for my boyfriend. It's very tasty and healthy, and easy to make! Cooked brown rice to have on the side as well as broccoli and a fresh green salad.

Really enjoyed this. I made it with hake, and used oregano rather than thyme. Excellent sauce, and lovely with boiled potatoes.

Not great, would not bother again, Delia Smith does a much easier recipe that is similar to this, I will just stick to Delia's in future.

Used rosemary instead of thyme and it tasted great. I'll definitely add some lemon juice if I make it again. Served it with basmati and wild rice which went really nicely.

Did this with some river cobbler, really nice. Used crushed tomatoes from the garden rather than a tin, through a bit of broccoli in and served it with sautéed potatoes. Will be making it again.

Very tasty, added just a little garlic and some halved cherry tomatoes for some added bite. Served with roasted peppers stuffed with couscous and went down a treat. Best bit was I got to socialise rather than spend hours in the kitchen.

really enjoyed this recipe, the sauce was lovely. we used frozen fish but just cooked it in the oven for 15 minutes and slipped the pieces into the sauce for the last 5 or so minutes. Also made double the quantity of sauce, which was comfortably enough for three of us.
