  • 400g new potatoes, halved if large
  • 2 tbsp olive oil
  • 8 asparagus spears, trimmed and halved
  • 2 handfuls cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 2 salmon fillets, about 140g/5oz each
  • handful basil leaves

Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

Delicious! As the asparagus season is over I made it with courgette and aubergine instead. The cherry tomatoes were very tasty. I shall make it again.

Delicious! I added garlic, a red chilli, courgette, carrot and shallots, leaving out the potatoes and tomatoes. Served with tomato couscous, it was very filling and simple to make.

Got to say it tastes alot better than it sounds, honestly give it a go, you'll definitely be suprised. I made sweet and sour red onions to top off the salmon when it came out of the oven (recipe on this site)....delicious!

we found this a bit boring! sorry to disagree with others. Certainly quick and easy, but don't think I'll be making it again.

Very tasty, balanced dish. We really enjoyed it - next time, I will add a few more potatoes. We served it with garlic bread - lovely!

Made it on a Friday night (always a 'special dinner night' for us) and it was delicious. And with so little washing up to do the weekend started early! Perfect.

Made this last night, my salmon was a bit chunkier than suggested and so we had to pan fry for a minute or 2, we also added mushrooms and sweetcorn to the final dish and left out the cherry toms. Added a white sauce too. Sooo yummy, will definitley be doing this again!!

Made this for 3 last night. Was easy to expand but only just had a dish big enough. Was VERY nice and very easy. Definitely do again.
(I've not found a bad dish on here yet!)
