Method

  1. Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.

  2. Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

Fabulous. Didn't have balsamic so used white wine vinegar. Didn't have basil, but put in good sprinkle of salt when salmon went in. Read previous reviews, so put asparagus in 5 mins later than recipe suggested and it was just right. Really nice, going straight into recipe book.

A very quick, easy & nutritious mid-week evening meal.

As others here have said, the asparagus was a little overdone so will add this with the tomatoes and salmon in future.

I followed this recipe to a T and it was perfect. Everything cooked perfectly. I used small red potatoes, and thicker asparagus so they wouldn't get soggy. I used a slab of Silver salmon about an inch and a half thick. It was great! Easy!

Very tasty and easy to make, and the portions were just right for the boyfriend and myself. I thought the asparagus was a bit overdone though, so I'll be adding it at the same time as the tomatoes and the fish next time I make this. As for seasoning, I sprinkled the fish with a bit of oregano and black pepper, and just a dash of salt at the end over the veggies.

My husband loved this, so that's always a winner. It was so easy and so yummy - will definitely make this again (although next time I'll have to add an extra piece of Salmon as hubby wanted more!!)

I made this for the family and everyone loved it. I added fingers of courgettes and shallots. Thought the asparagus was a little overdone, so would add it a bit later next time.

This is a great and very easy recipe. Made this for lunch and it was absolutely heavenly. I used chopped salad tomatoes instead of cherry tomatoes as I didn't have any cherry tomatoes.

I added 3 tbsp of olive oil instead of 2. I also added salt, pepper, oregano and mixed herbs. Delicious!

Made this for dinner this evening and thoroughly enjoyed it, as did hubby who can be a fussy eater. I added a few chunky carrots with peeled potatoes in wedges as I didn't have new potatoes, the timing was perfect as everything was cooked to perfection. Will definitely do this one again, thanks for sharing :-)

I seasoned the potatoes with garlic, salt and pepper and added a chopped courgette at the same time as the asparagus which worked very well. I also squeezed 1/4 of a lemon when adding the salmon and cooked 1/4 lemon between the pieces of salmon which I squeezed over before serving. I was very generous with the balsamic and my other half also added a splash of soya sauce. It was yummy and excellent for a novice like me. Will be making again.

A very tasty, easy, and low maintenance dish. The fish was cooked to perfection, couldn't fault it. Will certainly be making this dish again.

Easy, simple and delicious. Perfect for when your short of time but wanting something tasty and healthy. Even got a fussy twelve year old eating asparagus thanks to the balsamic vinegar which he loves. Like many other reviews, I added extra balsamic and halfed the tomatoes - will add extra asparagus next time as it now gets fought over in my house. Easily doubled or quadrupled for fuss free entertaining.

I adapted the recipe a bit based on the comments and our previous try:
- add 1 clove garlic (crushed) with the potatoes;
- first put the potatoes in for 25 mins;
- then add both the tomatoes and asparagus at the same time for 15-20 mins;
- use 2 tbsp balsamic instead of 1;
- pan-fry the salmon separately for extra crispiness :)

I read other comments first so did following -
Boiled potatoes first for 15 mins and added lots of seasoning to them
I also added chorizo and courgette at the asparagus stage.
I ended up cooking potatoes for 20, asparagus, courgette for 20 then added salmon and tomato for 20 ....
It was delicious! I chopped some of the tomatoes and kept some whole. I bought good quality ones on the vine.
I also seasoned salmon with lemon juice and black pepper.
Wonderful and very easy!
